What is “chimarrão” in Brazil?

Chimarrão is southern Brazil’s version of mate. Ground erva-mate goes into a gourd called a cuia, gets topped up with hot water, and is sipped through a metal straw called a bomba. It’s strong and bitter, and it’s meant to be shared: one gourd goes around the group. In Rio Grande do Sul it’s part of local identity.
