What is 'crema d’aglio' in modern Italian cooking?
Crema d’aglio is the chef’s-version garlic upgrade. Drop whole cloves into cold milk, bring to a boil, drain, repeat four times. The garlic loses its bite and turns sweet. Emulsify it with extra-virgin olive oil and you get a mayo-thick crema that coats pasta evenly, without the raw-garlic harshness of an old-school aglio e olio finish.
